WE MAKE
Everything begins with milk, sourced from carefully selected Greek herds, and with the knowledge of three generations of cheesemaking. With care at every stage, we make cheeses with authentic character.

WE MATURE
We give each cheese the time it needs. Expertise and patience guide the maturation process, allowing its aroma, texture and distinctive character to fully develop.

WE CURATE
We seek out cheeses with provenance, character and a story worth telling. From small Greek producers to distinctive cheesemakers from around the world, we curate only those that meet our own high standards.
